VAKALOLO: FIJIAN PUDDING (Dessert)
Serves 4
INGREDIENTS:
4 cups grated and peeled cassava (yucca) root
1 cup grated coconut
1/4 inch ginger root, grated
1 cup sugar
6 cloves (optional)
4 banana leaves (parchment paper or foil may be substituted)
INSTRUCTIONS:
1. In a medium-sized bowl, mix and stir the cassava, coconut, ginger, sugar, and cloves.
2. Spoon 1/4 of the mixture into each of the 4 banana leaves (or paper/foil).
3. Place in steamer and cook for 40 minutes.
