Haiti 2019 - Recipes

Riz créole: Creole rice

Serves 4

INGREDIENTS:
2 Tablespoons butter or margarine
¼ cup green onions, finely chopped
½ red bell pepper, trimmed, seeded, and finely chopped
1 tomato, finely chopped
½ teaspoon ground turmeric
½ teaspoon paprika
salt and pepper to taste
2 cups water
1 cup long grain rice

INSTRUCTIONS:
Melt butter or margarine in medium saucepan over medium-high heat. Add finely chopped green onions, red bell pepper, tomato, turmeric, paprika, and salt and pepper to taste. Stirring constantly, sauté for 2 to 3 minutes for flavors to develop. Add water and rice and bring to a boil. Stir, reduce heat to simmer, cover, and cook for 15 to 20 minutes, until rice is tender. Remove from heat. Let stand covered for 5 minutes.

To serve, transfer to a serving bowl and serve warm as a side dish with griots de porc or other meal.
